The official "Cheeses of France" Certification Program

The Cheeses of France Academy is an official accreditation program developed by the French Wine Society and endorsed by the Cheeses of France Marketing Council.

 

It is comprised of two levels of study.


 

Level I:  Cheeses of France Academy for Enthusiasts (coming Fall 2009)

mapcheese.jpgThis program covers cheese and cheesemaking fundamentals .  What is cheese? What is the history behind the product? How do you buy, store and serve it? How do you properly taste and assess a cheese with an eye to quality and ripeness? This class covers the basics in a spirit of discovery --supporting lecture with a palette of cheeses that demonstrate the diversity found within the cheeses of France.

Level II:  Cheeses of France Academy for Industry Professionals (coming June 2010)
   

cheeseacademy1.jpgThis program delves deeper into cheese and cheesemaking fundamentals and studies each particular cheese type in depth.  Here, French cheeses will be put into their regional and seasonal contexts. This foundation will then be used as a springboard to demonstrate the assemblage of themed cheese plates and proper cheese and wine pairing. Students will hone their ability to appreciate and assess the cheeses of France all the while learning the lore and legends associated with them!

   

Learning Methods:

 

Self-Study:  Study Manual with sensory exercises (cheese lists and mail-order forms for more exotic cheese types)


Classes:
  Taught by accredited FCA instructors around the country.


Test:
Successful candidates receive the Master Fromager post-nominal awarded by French Wine Society and Cheeses of France.
