This curriculum is designed for educators who wish to incorporate cheese into their teaching repertoire as an independent unit or intertwined with French wine study. You will learn cheese-making fundamentals, the milks, the styles…then explore the world of French cheese and their wine affinities.

Each attendee will be given teaching materials and shown how to use them!

Armagnac Master Class
May Matta-Aliah and Jessica Bell, Armagnac Ambassadors

As Armagnac gears up to celebrate its 700th birthday in 2010, it is a good time to ask yourself how much you really know about “The True Spirit of France?”

This in-depth seminar, co-taught by Armagnac Ambassadors May Matta-Aliah and Jessica Bell, will take you through the rich history of the Armagnac region, explain its distinctive terroir, its unique grape varieties, its proprietary process of distillation, and its varying methods of maturation and aging. You will learn how it compares to Cognac, but more importantly, you will discover what sets Armagnac apart.

A range of Armagnac styles plus older Vintage-dated Armagnacs will be tasted in this seminar.
